Cauliflower Hot Wings

1 cup all-purpose flour
1 teaspoon chili powder
1/2 teaspoon garlic powder
Kosher salt
1 medium head cauliflower, broken into 1.5" florets
2 tablespoons unsalted butter
1/2 cup buttermilk
1/2 cup Moore's Habanero Hot Sauce


1. Preheat oven to 450 degrees F; place oven roacks in the top and bottom positions. Line two baking sheets with parchment.
2. For the cauliflower: Whisk the flour, chili powder, garlic powder and 1 teaspoon salt in large bowl. In a measuring cup, stir together the buttermilk and 1/2 cup water. Whisk the buttermilk mixutre into the flout to make a smooth batter.
3. Add the cauliflouwer to the batter and toss well to coat. Transfer the cauliflower to the prepared baking sheets, shaking excess batter back into the bowl. Arrange the florets on the baking sheets on top of cooling rack so they don't touch. Bake until the batter is set, about 15 minutes.
4. While the cauliflower is baking, melt the butter with Moore's Habanero Hot Sauce in a small saucepan over low heat. Once the cauliflower has baked for about 15 minutes and batter is set, cover with half of the hot sauce mixture, then turn the florets over and cover with the rest of the hot sauce mixture.
5. Set the oven on broil. Broil the cauliflower until tender and the coating is crispy, about 2-3 minutes. Let cool briefly before serving with the dipping sauce. Feel free to serve celery and/or carrot sticks, plus some bell pepper strips and cucumber slices alongside. ENJOY!
