Buffalo BBQ Chicken Salad Sandwich

1 1/2 Pounds of Boneless, skinless Chicken Tenders
Olive Oil, for drizzle
Salt and Pepper to taste
1/2 cup plus 1/4 cup Moore's Honey BBQ Wing Sauce, divided
2 Tbsp. plus 1 Tbsp. Moore's Original Buffalo Wing Sauce, divided
1/2 cup Mayonnaise
1/3 cup Red Onion, finely chopped
1/3 cup Celery, finely chopped
5 slices Thick-cut Bacon
1/2 Fresh Pineapple, skinned, cored and cut in half lengthwise
5 Ciabatta Sandwich Rolls
Whole Grain Mustard (may use spicy brown or dijon if desired)
2 1/2 cups Arugula
5 tsp. Bleu Cheese Crumbles


1.  Drizzle chicken tenders with olive oil and sprinkle with salt and pepper.  Grill until internal temperature reaches 165 degrees, turning once.
2.  Place  cooked chicken tenders in a large bowl.  Using 2 forks, shred the tenders into small pieces. Add the celery and red onion.
3.  Combine the mayonnaise, 1/2 cup Moore's Honey BBQ Wing Sauce and 2 Tbsp. Moore's Original Buffalo Wing Sauce in a small bowl;  add to the chicken mixture & stir to evenly mix. Set in refrigerator to cool.
4.  Meanwhile, cook the bacon either on the stovetop or in a preheated 400 degree oven for 15-18 minutes or until desired crispiness.  Drain and cut bacon strips in half.
5.  In a separate bowl, combine the remaining 1/4 cup of Moore's Honey BBQ Wing Sauce and 1 Tbsp. Moore's Original Buffalo Wing Sauce and set aside.
6.  Drizzle the inside of the ciabatta rolls with olive oil.  Grill the ciabatta rolls and the pineapple just until warm with light grill marks.  Remove from heat.  Slice the pineapple into quarter-inch thick slides.
7.  To assemble the sandwiches:
  •       Spread a thin layer of mustard onto the bottom half of each bun.
  •       For each sandwich, next add approx. 1/2 cup arugula, evenly diperse 1/5 of the chicken       salad mixture and crisscross 2 pieces of bacon on top.
  •       Drizzle each sandwich with the reserved Honey BBQ and Buffalo Sauce mixture, place           the top on each sandwich, and serve. Enjoy!
